This was a question I asked myself because I am carb eating Italian born and raised. The love for pasta, potatoes, bread and butter were connected to love, fun and family meals together.
So how to eat potatoes and other carbs…the answer I gave myself is you eat something else! Will it be the same no! Can it be delicious, exciting, fun to cook and filling, YES! Do i still eat potatoes? Yes every once in a while and not large portions, same goes with pasta.
You have the best control over your own mind so why can’t cauliflower or zucchini taste as good as pasta or potatoes? I think so it is literally mind over matter. Why not eat 2 or 3 vegetables instead of meat, potatoes, vegetables. If I the Italian, Irish over 50 (almost 60) can do it anyone can.
So I set out to change my way of building meals and started adding more vegetables and less harsh carbs like white potatoes, rice and pasta.
I now have some favorites, cauliflower casserole, twice baked broccoli, zucchini noodles, zucchini hash browns and cauliflower (potato salad). These are just a few.
I like to cook my own birthday dinners, mothers day etc. This birthday I made steak bites in my airfryer, garlic butter mushrooms and the best was my cauliflower casserole. I sauteed some bacon, sliced a small head of cauliflower removing the stem or core, also thin slices of sweet onion. I added the cauliflower and onion to the skillet in bacon grease the binder was a tablespoon of cream cheese, ¼ cup of heavy cream, 2 tbsp of sour cream I also ground fresh black pepper to taste I mixed the sauteed onion, cauliflower and bacon.
Then shredded some havarti and cheddar cheese.I mixed some cheese and sprinkled the rest on top. Into a 350 degree oven for 30 minutes. Delicious!
If you try it and don’t like it make up your own. You can do it think of all the flavors you like with potatoes and then exchange for cauliflower.
When using zucchini as a substitute for potatoes just remember zucchini contains a lot of water. For the hashbrowns, shred the zucchini and place it in cheesecloth or very thin towel squeeze as much water as possible. I add an egg, shredded onion and some cheese. Mix it all together and fry like hash browns so yummy. I have cooked beef with broccoli and instead of rice I put it over riced cauliflower.
Food is amazing but the power of the creative cook is unlimited you can cook healthy, fun, decadent, and so very flavorful!
I don’t always succeed sometimes I throw some fries in my airfryer and split a baked potato with my husband. But I have also fallen in love with fried radishes! Can you believe it they are delicious. Grilled cheese made with zucchini instead of bread.
You can give up carbs without giving up your love for food. Try it !
